Frijoles (Beans)

Ingredients (for 2)

  • 1 cup fresh kidney beans
  • 2 tbsp bay leaves
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 1/2 onion
  • salt & black pepper

Directions

  • Rinse the beans and add them to a deep pot
  • Add crushed garlic, coarsely chopped onions, bay leaves, olive oil and chili powder
  • Pour enough water to reach a level 2 fingers (about 1½ inches) over the beans
  • Bring to a boil over medium-high heat
  • Season with salt and black pepper
  • Cover with a lid and simmer until the beans are tender (about 2 hours), adding more water if needed
  • Drain with a slotted spoon and serve!

Tips from the Chef

Beans can be prepared in advance and will keep in the refrigerator for up to 4 days. If you use dry beans, make sure you soak them in cold water for at least 8 hours before cooking!
