Ingredients (for 2)
- 1 cup fresh kidney beans
- 2 tbsp bay leaves
- 1 tsp chili powder
- 2 tbsp olive oil
- 2 garlic cloves
- 1/2 onion
- salt & black pepper
Directions
- Rinse the beans and add them to a deep pot
- Add crushed garlic, coarsely chopped onions, bay leaves, olive oil and chili powder
- Pour enough water to reach a level 2 fingers (about 1½ inches) over the beans
- Bring to a boil over medium-high heat
- Season with salt and black pepper
- Cover with a lid and simmer until the beans are tender (about 2 hours), adding more water if needed
- Drain with a slotted spoon and serve!
Tips from the Chef
Beans can be prepared in advance and will keep in the refrigerator for up to 4 days. If you use dry beans, make sure you soak them in cold water for at least 8 hours before cooking!
