Very famous French (and Belgian) dessert used for breakfast. Can be eaten as it is or topped with whipped cream, fresh fruit, honey or powdered sugar… imagination is your only limit!
Ingredients (for 2)
- 1 cup wheat flour
- 1 cup milk
- 1 egg, separated
- 1/2 tsp vanilla extract
- 1/2 cube yeast
- 2 tbsp white sugar
- 3 tbsp butter
- a pinch of salt
Directions
- Gently warm milk in a saucepan, without making it simmer
- Pour some of it in a cup and dissolve the yeast; let stand for about 10 minutes
- In a large bowl, whisk together the beaten egg yolk, half of the remaining milk and the melted butter
- Stir in and combine the yeast mixture, white sugar, salt and vanilla extract
- Start to add in batches some of the milk and some of the flour, stirring continuously
- In a different bowl, beat the egg white until soft and add to the batter
- Cover the bowl with plastic wrap and let rise in a warm place for about 1 hour (it should double in volume)
- In the meantime preheat oven to 400°F (200°C)
- Grease a waffle mold (or any mold with the shape you like) with butter or oil
- Pour the mixture into the mold and bake in oven for 10-15 minutes or until golden and soft!
