French Tomato Soup

A true French staple, very easy to cook and full of flavors and vitamins. In summer you can prepare this in advance and serve it chilled… delicious!

Ingredients (for 2)

  • 4 red ripe tomatoes
  • 2 tbsp grated Parmesan cheese
  • 1 tsp oregano
  • 1/2 tsp thyme
  • 1/2 tbsp parsley
  • 1 garlic clove
  • 1/4 carrot
  • 1/4 stalk celery
  • 1/4 onion
  • 2 tbsp olive oil
  • 3 cups water
  • salt & black pepper


  • Chop the onions, celery and carrots, and sizzle in olive oil until golden brown
  • Add the tomatoes (peeled and chopped), water and a pinch of salt, and let it simmer (covered) for 20 minutes, stirring frequently
  • Add garlic (crushed), thyme, oregano, parsley and simmer for another 5 minutes
  • Pour in the serving bowls, sprinkle with grated Parmesan cheese and season with black pepper to your personal taste

Warm baguette, croutons or bruschetta
