A true French staple, very easy to cook and full of flavors and vitamins. In summer you can prepare this in advance and serve it chilled… delicious!
Ingredients (for 2)
- 4 red ripe tomatoes
- 2 tbsp grated Parmesan cheese
- 1 tsp oregano
- 1/2 tsp thyme
- 1/2 tbsp parsley
- 1 garlic clove
- 1/4 carrot
- 1/4 stalk celery
- 1/4 onion
- 2 tbsp olive oil
- 3 cups water
- salt & black pepper
Directions
- Chop the onions, celery and carrots, and sizzle in olive oil until golden brown
- Add the tomatoes (peeled and chopped), water and a pinch of salt, and let it simmer (covered) for 20 minutes, stirring frequently
- Add garlic (crushed), thyme, oregano, parsley and simmer for another 5 minutes
- Pour in the serving bowls, sprinkle with grated Parmesan cheese and season with black pepper to your personal taste
