The classic French fries, in this particular version with sweet potatoes and cut into wedges…
Ingredients (for 2)
- 3 large sweet potatoes (about 300 gr or 10 oz)
- oil for frying
- salt
Directions
- Wash and peel and dry the sweet potatoes
- Cut each potato into thin wedges about 3 inches (8 cm) long and set aside
- Heat oil in a deep heavy bottomed skillet or frying pan over high heat
- When oil is hot (about 325 °F or 175 °C), add potatoes wedges in batches and fry for 3-4 minutes or until crisp and golden
- Remove from oil with a slotted spoon and reserve on a plate with kitchen paper
- Drain well, sprinkle with salt and serve hot!

Ketchup, mayonnaise or paprika
Tips from the Chef
- You can blanch potato wedges in boiling water for 2 minutes and then pat dry them before frying to obtain a better result (softer inside and crispier outside)
- If you have to fry many of them, you can keep the cooked potatoes warm in a preheated oven
