Fig and Nut Cookies

Ingredients (for 2)

  • 2 figs
  • 1/2 cup all-bran cereals
  • 1/4 cup almonds
  • 1/4 cup cranberries
  • 1/2 cup wheat flour
  • 1 egg
  • 1/4 tsp baking powder
  • 3 tbsp brown sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp butter

Directions

  • Set oven to 350 °F (180 °C) and line a cookie sheet with parchment paper
  • Combine brown sugar, eggs and butter then add vanilla, cranberries and figs; stir to combine
  • Put all purpose and wheat flour together in a bowl along with baking powder, nutmeg, bran cereal and cinnamon; combine and add to eggs
  • Stir mixture together until thoroughly combined, then add almonds and fold
  • Drop spoons of cookie mix onto prepared cookie sheet and sprinkle sugar on top of cookies
  • Bake for 12 minutes then remove from heat and cool.
