Ingredients (for 2)
- 2 figs
- 1/2 cup all-bran cereals
- 1/4 cup almonds
- 1/4 cup cranberries
- 1/2 cup wheat flour
- 1 egg
- 1/4 tsp baking powder
- 3 tbsp brown sugar
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 2 tbsp butter
Directions
- Set oven to 350 °F (180 °C) and line a cookie sheet with parchment paper
- Combine brown sugar, eggs and butter then add vanilla, cranberries and figs; stir to combine
- Put all purpose and wheat flour together in a bowl along with baking powder, nutmeg, bran cereal and cinnamon; combine and add to eggs
- Stir mixture together until thoroughly combined, then add almonds and fold
- Drop spoons of cookie mix onto prepared cookie sheet and sprinkle sugar on top of cookies
- Bake for 12 minutes then remove from heat and cool.
