Easy Ratatouille

Ingredients (for 2)

  • 1 bell pepper
  • 1/2 eggplant
  • 1 large zucchini
  • 2 red tomatoes
  • 1/4 onion
  • 4 tbsp olive oil
  • 1 garlic clove
  • 1/2 tsp thyme
  • 1 tbsp fresh basil
  • salt & black pepper

Directions

  • Prepare the tomatoes: boil in water for 30 seconds, drain and remove the peel, remove the seeds and slice or chop into cubes
  • Slice or chop the peppers, eggplants and zucchini, and finely mince garlic, thyme and basil
  • Dice the onions, put them in a deep saucepan with olive oil and stir fry until golden brown
  • Add peppers first and a pinch of salt, and cook at medium heat for 5 minutes
  • Add eggplants and zucchini, cover and cook for another 5 minutes at low heat
  • You can add some water if necessary, until vegetables soften
  • Finally add tomatoes, garlic, thyme and basil
  • Cook at low heat for another 15 minutes, stirring frequently
  • Season with pepper and serve with a warm baguette or bruschetta
