An easy, but very tasty, soup with lentils and cherry tomatoes for a healthy vegetarian meal…
Ingredients (for 2)
- 1 ½ cup lentils
- 3 cups vegetable stock
- 1/2 cup cherry tomatoes
- 1/2 onion
- 1/2 carrot
- 1/2 celery stalk
- 1/4 tbsp marjoram
- 1 garlic clove
- 2 tbsp olive oil
- salt & black pepper
Directions
- Rinse the lentils thoroughly and soak them in warm water for about 10-15 minutes
- In the meantime, dice the onions and coarsely chop the carrots, celery and garlic
- Take a large saucepan and bring oil to high heat
- Add the diced onions and sauté until translucent
- Add the carrots, celery, and garlic, and sauté for additional 3 minutes
- Add the lentils (rinsed), cherry tomatoes (chopped), stock and bring to a boil
- Reduce heat to medium, cover, and simmer for about 30 minutes or until lentils are soft
- Sprinkle with marjoram and season with salt and black pepper to taste before serving
