Easy Lentil Soup

An easy, but very tasty, soup with lentils and cherry tomatoes for a healthy vegetarian meal…

Ingredients (for 2)

  • 1 ½ cup lentils
  • 3 cups vegetable stock
  • 1/2 cup cherry tomatoes
  • 1/2 onion
  • 1/2 carrot
  • 1/2 celery stalk
  • 1/4 tbsp marjoram
  • 1 garlic clove
  • 2 tbsp olive oil
  • salt & black pepper


  • Rinse the lentils thoroughly and soak them in warm water for about 10-15 minutes
  • In the meantime, dice the onions and coarsely chop the carrots, celery and garlic
  • Take a large saucepan and bring oil to high heat
  • Add the diced onions and sauté until translucent
  • Add the carrots, celery, and garlic, and sauté for additional 3 minutes
  • Add the lentils (rinsed), cherry tomatoes (chopped), stock and bring to a boil
  • Reduce heat to medium, cover, and simmer for about 30 minutes or until lentils are soft
  • Sprinkle with marjoram and season with salt and black pepper to taste before serving
