Ingredients (for 2)
- 3 chicken thighs
- 1 tsp curry powder
- 1 tbsp peanuts
- 1 tbsp brown sugar
- 2 tbsp soy sauce
- 2 garlic cloves
- 1/4 onion
- 1 tsp ginger
- 1 lime
- 1/4 cup coconut milk
- 2 tbsp vegetable oil
- chili peppers (as desired)
Directions
- Debone and cut the chicken thighs into pieces, and place them in a bowl
- Put in a food processor the ingredients for the marinade: oil, lime juice, onions, ginger, curry powder, chili peppers and half of the garlic, soy sauce and brown sugar (save the other half for the peanut sauce)
- Mix thoroughly until fully blended and pour it over the chicken
- Give it a good stirring and let it rest for 1 hour, covered with plastic wrap
- In the meantime, soak the skewers in cold water for at least 10 minutes and prepare the peanut sauce
- For the peanut sauce you will need the food processor again and blend well together peanuts, coconut milk and the remainder (half) of the garlic, soy sauce and brown sugar
- When the meat is ready, thread the pieces onto the skewers and grill them 5 minutes per side
- Serve smoking hot with your peanut sauce!
