Cumin Rice

Wonderful, fragrant, original cumin Basmati rice, perfect as a side to pretty much any Indian main course. So many variations exist, many of them with the addition of onions, garlic and other spices, but we like it simple and straightforward…

Ingredients (for 2)

  • 1 cup Basmati rice
  • 1 tsp cumin seeds
  • 2 tbsp vegetable oil
  • 2 cups water
  • salt

Directions

  • Rinse the basmati rice under cold water a few times and set aside
  • Heat vegetable oil or ghee in a large nonstick pan, add the cumin seeds and cook until they sizzle
  • Add the rice, water and a good pinch of salt
  • Stir well, cover and cook over low heat according to package directions, or approximately 8-10 minutes, stirring frequently
  • Turn off the heat and let it rest (covered) a couple of minutes before serving

Tips from the Chef

  • Be careful not to overcook the cumin seeds or the rice will taste bitter
  • Always use 2 parts of water for each part of rice: a cup is perfect to get the amounts right
