Crème Brulee

Classic French dessert and a real stunner for your guests, easier to prepare than you might think. Can be prepared in advance and refrigerated for up to 2 days…

Ingredients (for 2)

  • 2 eggs
  • 1 cup whipping cream
  • 1/4 cup milk
  • 1/2 tsp vanilla extract
  • 2 tbsp white sugar
  • 1/2 tbsp brown sugar

Directions

  • Preheat the oven to 180 C° (350 F°)
  • Put the milk, whipping cream and vanilla in a saucepan and bring to boiling point, stirring frequently
  • In the meantime, gently mix the egg yolks with sugar in a separate bowl (but do not whisk because it will add air to the mix)
  • Add the cream a little at a time and stir to get an even texture
  • Pour the cream in oven-safe containers, put them in a roasting pan and add water to the pan until level is about half the height of the cream containers
  • Bake for 40 minutes
  • Take out the containers, allow them to cool (or refrigerate for later use) and switch the oven to grill mode
  • Sprinkle with brown sugar and put back in the oven until sugar has melted and the top is crusty, which should be about 5 minutes
