Spinach and Broccoli Soup

Ingredients (for 2)

  • 1 cup broccoli
  • 4 cups fresh spinach
  • 3 cups vegetable stock
  • 1 large potato
  • 1/4 leek
  • 1 tbsp sour cream
  • 2 tbsp butter
  • salt & black pepper


  • Heat butter in a large pot
  • Add leeks to the butter along with pepper and salt; cook for 5 minutes until leeks are soft
  • Add broth to the pan along with potatoes and broccoli, and cook for 20 minutes more
  • Add spinach and cook until wilted, then put aside to cool
  • Put into a blender and puree until smooth
  • Return to pan and heat
  • Serve hot, topped with sour cream and a dash of pepper

Tips from the Chef

  • You can add more spice such as cayenne or other hot peppers to give this soup some heat
  • You could add some cooking cream to the broth to make an even more creamy soup
