Ingredients (for 2)
- 1 cup broccoli
- 4 cups fresh spinach
- 3 cups vegetable stock
- 1 large potato
- 1/4 leek
- 1 tbsp sour cream
- 2 tbsp butter
- salt & black pepper
Directions
- Heat butter in a large pot
- Add leeks to the butter along with pepper and salt; cook for 5 minutes until leeks are soft
- Add broth to the pan along with potatoes and broccoli, and cook for 20 minutes more
- Add spinach and cook until wilted, then put aside to cool
- Put into a blender and puree until smooth
- Return to pan and heat
- Serve hot, topped with sour cream and a dash of pepper
Tips from the Chef
- You can add more spice such as cayenne or other hot peppers to give this soup some heat
- You could add some cooking cream to the broth to make an even more creamy soup
