Ingredients (for 2)
- 8 scallops
- spaghetti (about 6 oz. total or more if you’re hungry!)
- 2 slices bacon (smoked)
- 1/2 cup cream
- 2 garlic cloves
- 1 tbsp grated Parmesan cheese
- 1/4 glass white wine
- 1/2 cup chicken stock
- 1/2 tomato (red, ripened)
- 2 tbsp olive oil
- salt & pepper as desired
Directions
- Heat a large skillet and cook bacon in a little oil until brown and crisp; remove from pot and chop
- Use pepper and salt to season scallops and sear in pot for 2 minutes on each side; then remove from pot
- Drain bacon oil from pot, add olive oil along with garlic (crushed) and cook for 1 minute
- Put in stock and wine and allow to cook until about 1/3 of liquid reduces; then add cream and cook for another 2 minutes
- Add bacon, scallops, tomatoes, pepper and salt to sauce and saute for 3-4 minutes until scallops are thoroughly heated
- In the meantime, prepare spaghetti as directed on package, including salt, until al dente; once ready, drain and add it to the sauce
- Sprinkle with grated Parmesan cheese and toss to combine
