Easy to prepare but sophisticated in flavor, a super healthy cauliflower soup with almonds and lemon zest… yummy!
Ingredients (for 2)
- 4 cups cauliflower
- 2 cups vegetable stock
- 1 cup milk
- 1 lemon
- 1/4 cup almonds
- 1 garlic clove
- 1/4 tsp saffron
- 2 tbsp olive oil
- salt & black pepper
Directions
- Chop the cauliflower into florets and reserve a couple of them aside to garnish
- Add the rest to a saucepan along with a pinch of saffron, salt, minced garlic and vegetable stock; heat and simmer for 20 minutes
- When the cauliflower florets are soft, chop the almonds or ground them and add them to the saucepan, stir in milk and lemon peel (grated)
- Remove from heat and, with an electric blender, mix until smooth
- In a skillet, heat olive oil and stir-fry the florets you reserved before with saffron until golden brown
- Pour the soup in your serving bowls and garnish with the golden florets, black pepper and some olive oil
