Creamy Cauliflower Soup

Easy to prepare but sophisticated in flavor, a super healthy cauliflower soup with almonds and lemon zest… yummy!

Ingredients (for 2)

  • 4 cups cauliflower
  • 2 cups vegetable stock
  • 1 cup milk
  • 1 lemon
  • 1/4 cup almonds
  • 1 garlic clove
  • 1/4 tsp saffron
  • 2 tbsp olive oil
  • salt & black pepper


  • Chop the cauliflower into florets and reserve a couple of them aside to garnish
  • Add the rest to a saucepan along with a pinch of saffron, salt, minced garlic and vegetable stock; heat and simmer for 20 minutes
  • When the cauliflower florets are soft, chop the almonds or ground them and add them to the saucepan, stir in milk and lemon peel (grated)
  • Remove from heat and, with an electric blender, mix until smooth
  • In a skillet, heat olive oil and stir-fry the florets you reserved before with saffron until golden brown
  • Pour the soup in your serving bowls and garnish with the golden florets, black pepper and some olive oil
