Classic Chicken Curry

Ingredients (for 2)

  • 1 chicken breast
  • 1 tsp curry powder
  • 1/2 cup white yogurt
  • 1 can tomato sauce
  • 2 tbsp fresh coriander / cilantro
  • 1 garlic clove
  • 1/4 onion
  • 1 tsp ginger
  • fresh chili peppers
  • 2 tbsp vegetable oil (or ghee)
  • salt

Directions

  • Cut the chicken breast into pieces, any size you like
  • Heat the oil (or ghee) in a frying pan, dice the onion and gently brown it for 2 minutes
  • Add the chicken and a pinch of salt, and cook it until lightly browned, stirring frequently
  • Add the tomato sauce and the yogurt (or alternatively coconut milk) and let it simmer gently for 15-20 minutes until sauce is thick
  • Spice it up with garlic (minced), ginger (grated) and curry powder
  • Stir, cover and let it absorb the flavors at gentle heat for 2-3 minutes
  • Turn off the heat and add fresh coriander and chili to your personal taste
