Ingredients (for 2)
- 1 chicken breast
- 1 tsp curry powder
- 1/2 cup white yogurt
- 1 can tomato sauce
- 2 tbsp fresh coriander / cilantro
- 1 garlic clove
- 1/4 onion
- 1 tsp ginger
- fresh chili peppers
- 2 tbsp vegetable oil (or ghee)
- salt
Directions
- Cut the chicken breast into pieces, any size you like
- Heat the oil (or ghee) in a frying pan, dice the onion and gently brown it for 2 minutes
- Add the chicken and a pinch of salt, and cook it until lightly browned, stirring frequently
- Add the tomato sauce and the yogurt (or alternatively coconut milk) and let it simmer gently for 15-20 minutes until sauce is thick
- Spice it up with garlic (minced), ginger (grated) and curry powder
- Stir, cover and let it absorb the flavors at gentle heat for 2-3 minutes
- Turn off the heat and add fresh coriander and chili to your personal taste
