Classic Boiled Potatoes

Does it get any more basic? Yet perfectly cooked and seasoned boiled potatoes are among the best and healthiest side dishes you can prepare. Don’t mess with ingredients… top quality extra virgin olive oil and fresh parsley are all you need.

Ingredients (for 2)

  • 4 potatoes
  • 2 tbsp olive oil
  • 1 tbsp parsley
  • 1 tbsp rock salt

Directions

  • Boil the potatoes in salted water until soft (cooking time depends on potato size, but you can expect about 30 minutes for medium sized potatoes)
  • Drain and allow to cool
  • Peel the potatoes and cut them into large chunks
  • Sprinkle with freshly chopped parsley and drizzle with extra virgin olive oil
