Ingredients (for 2)
- 4 potatoes
- 2 tbsp olive oil
- 1 tbsp parsley
- 1 tbsp rock salt
- Boil the potatoes in salted water until soft (cooking time depends on potato size, but you can expect about 30 minutes for medium sized potatoes)
- Drain and allow to cool
- Peel the potatoes and cut them into large chunks
- Sprinkle with freshly chopped parsley and drizzle with extra virgin olive oil
