Chocolate Coconut Balls

Ingredients (for 2)

  • 1 cup coconut flakes
  • 1 cup chocolate chips
  • 1/2 cup whipping cream
  • 4 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1 tbsp butter

Directions

 

  • Put whipping cream, powdered sugar and vanilla in a bowl, use a hand mixer to beat until peaks form
  • Add coconut flakes to mixture, fold and refrigerate until mixture gets firm
  • Remove mixture from fridge and form into balls, put into freezer and freeze completely, then use a scoop or spoon to form into balls
  • When ready, melt butter and chocolate together in a double broiler and dip coconut balls into mixture
  • Place onto a baking sheet lined with parchment paper and allow to cool
  • Place into a covered jar or container and store in refrigerator
