Ingredients (for 2)
- 1 cup coconut flakes
- 1 cup chocolate chips
- 1/2 cup whipping cream
- 4 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 1 tbsp butter
Directions
- Put whipping cream, powdered sugar and vanilla in a bowl, use a hand mixer to beat until peaks form
- Add coconut flakes to mixture, fold and refrigerate until mixture gets firm
- Remove mixture from fridge and form into balls, put into freezer and freeze completely, then use a scoop or spoon to form into balls
- When ready, melt butter and chocolate together in a double broiler and dip coconut balls into mixture
- Place onto a baking sheet lined with parchment paper and allow to cool
- Place into a covered jar or container and store in refrigerator
