Ingredients (for 2)
- 2 cucumbers
- 1 avocado
- 2 cups vegetable stock
- 4 tbsp fresh coriander / cilantro
- 1 tbsp lemon juice
- salt & black pepper
Directions
- Chop the cucumber and add to an electric blender or food processor
- Peel, pit and chop avocados and add to the blender
- Add the vegetable stock, half of the fresh coriander, salt and black pepper, and process to blend
- Chill in the fridge for at least 1 hour
- When ready to serve, pour in your serving bowl, garnish with the remaining fresh coriander and squeeze lemon juice on top
