Chilled Cucumber and Avocado Soup

Fresh, rich, healthy raw soup served chilled and perfect as a summer refresh. Can be prepared up to one day in advance…

Ingredients (for 2)

  • 2 cucumbers
  • 1 avocado
  • 2 cups vegetable stock
  • 4 tbsp fresh coriander / cilantro
  • 1 tbsp lemon juice
  • salt & black pepper

Directions

  • Chop the cucumber and add to an electric blender or food processor
  • Peel, pit and chop avocados and add to the blender
  • Add the vegetable stock, half of the fresh coriander, salt and black pepper, and process to blend
  • Chill in the fridge for at least 1 hour
  • When ready to serve, pour in your serving bowl, garnish with the remaining fresh coriander and squeeze lemon juice on top
