Chicken Stir Fry with Peppers and Greens

Ingredients (for 2)

  • 1 chicken breast (about 11 oz or 360 gr)
  • 1/2 bell pepper
  • 1 cup green beans
  • 2 tbsp ketchup
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 tbsp oyster sauce
  • salt & black pepper

Directions

  • Wash and chop the peppers (remove seeds) and green beans and set them aside
  • Mix together ketchup and soy sauce in a large bowl
  • Cut the chicken breast into strips, add them to the bowl and stir until well coated
  • Season with salt and black pepper
  • Heat vegetable oil in a frying pan or wok and stir fry the chicken for 4 minutes, stirring frequently
  • Add peppers and green beans and cook for another 7-8 minutes over high heat (leave vegetables a bit crunchy)
  • Finally stir in the oyster sauce, reduce heat, and cook for 2-3 minutes more
  • Add some fresh chilies if you like and serve hot in your favorite bowls!
