Cordon bleu is a French term that means ‘blue ribbon’ and refers to the chef that created the dish. This dish can be made by any chef with its tasty filling of ham and cheese. If the name doesn’t make you feel like a star chef then the taste surely will!
Ingredients (for 2)
- 1 chicken breast
- 1/2 cup Gruyere cheese
- 3 or 4 slices of ham
- 1/2 cup bread crumbs
- 1/2 cup tapioca flour
- 1/4 cup white wine
- 1/2 tbsp corn starch
- 1/2 cup cream
- 1 bouillon cube
- 1 tbsp butter
- a touch of paprika
Directions
- If chicken breasts are thick use a meat tenderizer to flatten them
- Place a slice of ham and cheese onto each chicken piece leaving a 1/2 inch from the edge
- Roll chicken breast and seal using toothpicks to hold it in place
- Combine paprika, flour and breadcrumbs in a small container; roll chicken breasts in flour mixture
- Heat a large skillet over medium flame and melt butter then put in chicken and cook until chicken is golden all over
- Put in bouillon and wine and lower flame, cover pan and allow to cook for 20 minutes until chicken is tender and thoroughly cooked
- Remove chicken from pan, place on a warm dish and remove toothpicks
- Combine cream and cornstarch and pour into skillet, whisking constantly until it starts to thicken
- Spoon sauce on top of chicken and serve immediately!

This dish is best served with rice (white or brown) and a side of fresh green vegetables
