Chicken, Arugula and Mango Salad

A super easy chicken salad with the twist of arugula and fresh mango… unique and refreshing!

Ingredients (for 2)

  • 2 chicken breast fillets (about 180 gr or 6 oz)
  • 1 mango
  • 1/2 stalk celery
  • 3 cups arugula
  • 1/2 spring onion
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • salt


  • Boil or steam chicken breast in abundant salted water for about 20 minutes
  • Let cool on a plate and then coarsely chop or slice it
  • Peel and cut the mango in cubes and add them to a salad bowl
  • Wash and dry arugula, coarsely chop and add it to the bowl
  • Top with the chicken pieces celery and spring onions (thinly cut)
  • Sprinkle with olive oil, salt and lemon juice, and toss well

You can use vinegar instead of lemon juice and add chestnuts to the mix
