A super easy chicken salad with the twist of arugula and fresh mango… unique and refreshing!
Ingredients (for 2)
- 2 chicken breast fillets (about 180 gr or 6 oz)
- 1 mango
- 1/2 stalk celery
- 3 cups arugula
- 1/2 spring onion
- 1 tbsp lemon juice
- 2 tbsp olive oil
- salt
Directions
- Boil or steam chicken breast in abundant salted water for about 20 minutes
- Let cool on a plate and then coarsely chop or slice it
- Peel and cut the mango in cubes and add them to a salad bowl
- Wash and dry arugula, coarsely chop and add it to the bowl
- Top with the chicken pieces celery and spring onions (thinly cut)
- Sprinkle with olive oil, salt and lemon juice, and toss well

You can use vinegar instead of lemon juice and add chestnuts to the mix
