Chicken Apple Salad

This tasty salad is easy to prepare in just under 10 minutes. Great for using up left over chicken. Can be packed for a picnic or lunchtime…

Ingredients (for 2)

  • 1/2 chicken breast
  • 1/2 apple
  • 1 tbsp olive oil
  • 1 tbsp mayonnaise
  • 1/2 tbsp mustard
  • 1/2 tsp oregano
  • 1/2 tbsp honey
  • 1 tbsp red wine vinegar
  • 1/4 cup raisins
  • 1/2 stalk celery
  • garlic powder


  • Steam or boil chicken breast; once ready, cube or shred it and set aside
  • Chop apple and celery and put it in a bowl together with raisins and the chicken
  • Mix mayonnaise, vinegar, honey, oregano, mustard, olive oil and garlic powder together in another bowl
  • Pour dressing on chicken mixture and toss well
  • Serve on top of lettuce and sprinkle with nuts if you desire
