Chicken and Kale Soup

Kale is a wonderful vegetable… very high in vitamin C, vitamin K and is also rich in calcium. It cooks in little to no time in this delicious winter soup…

Ingredients (for 2)

  • 2 cups kale
  • 1/2 chicken breast
  • 3 cups chicken stock
  • 1/2 stalk celery
  • 1/2 carrot
  • 1/4 onion
  • 1/2 garlic clove
  • 1/2 tsp thyme
  • 2 tbsp olive oil
  • black pepper to taste


  • Heat olive oil in a skillet and sauté garlic (crushed) for 1-2 minutes
  • Add chicken (coarsely chopped) and thyme, cook for 5-6 minutes until golden brown, then transfer to a large stockpot
  • Add chicken stock, chopped celery and carrot, and cook for 15 minutes (covered) until chicken and vegetables are soft
  • Remove chicken from pot and cool for 5 minutes then use a fork to shred
  • Return chicken to pot, then add kale and cook for another 5 minutes
  • Remove pot from flame and let it rest a couple of minutes before serving
