Ingredients (for 2)
- 2 chicken breast fillets (about 180 gr or 6 oz)
- 1/4 cup mozzarella cheese
- 2 tbsp grated Parmesan cheese
- 3 cups chicken stock
- 1 cup cherry tomatoes
- 1 cup fusilli pasta
- 1 tbsp tomato paste
- 1 tbsp parsley
- 1 tbsp fresh basil
- 1 tsp oregano
- 1/4 onion
- 2 garlic cloves
- 2 tbsp olive oil
- salt & black pepper
Directions
- Prepare pasta as directed on package, including salt, drain and set aside
- At the same time, heat oil in a large pot and saute onion along with black pepper, oregano and salt; cook until translucent
- Put garlic (crushed) into pot and cook for 3-5 minutes until fragrant; then add tomato paste, stir and cook for another minute
- Add chopped cherry tomatoes to pot along with stock, mix to combine and bring to a boil; then lower heat and cook for 15-20 minutes
- Heat grill and use salt and pepper to season chicken; grill for 5 minutes on each side, then slice or cube and put aside
- Puree soup and add parsley and grated Parmesan cheese
- Put pasta in a heat resistant bowl, add soup, chicken and top with mozzarella
- Broil for about 2 minutes or until cheese melts, top with fresh basil and serve!
