Cassoulet

Traditional bean and meat casserole from the south of France, the perfect winter meal! This recipe uses canned beans for convenience but you could use dried beans as well (soaked, boiled and drained)….

Ingredients (for 2)

  • 1 cup cannellini beans
  • 1 fresh sausage
  • 1/4 duck breast
  • 1/4 cup bacon cubes
  • 1 can tomato sauce
  • 1/2 cup white wine
  • 1 cup chicken stock
  • 1 garlic clove
  • 1/4 onion
  • 1/4 carrot
  • 1/4 celery stalk
  • 2 tbsp olive oil
  • salt & black pepper

Directions

  • Finely chop the carrot, celery and onion
  • Put them in a deep saucepan with olive oil and bacon, and fry until golden brown
  • In the meantime, cut the meat in chunks and add it to the pan with a pinch of salt
  • Pour in the white wine and cook for 5 minutes at medium heat
  • Stir in the tomato sauce, white beans and crushed garlic, cover and let it simmer for about 1 hour
  • While simmering, stir it frequently and add chicken stock in small quantities to keep it moist
  • Season with pepper and garnish with a couple of parsley leaves (optional)

Best Served With

Warm baguette or bruschetta and a glass of red wine
