A super sweet fresh soup made with carrots and honey. Greatly appreciated by children, it is a perfect treat for grown ups who like sweet tastes…
Ingredients (for 2)
- 6 carrots
- 4 tbsp honey
- 1/2 cup cream
- 2 tbsp olive oil
- 1/2 tbsp grated Parmesan cheese
- salt
Directions
- Take farm fresh carrots, wash them under running water and scratch off the skin
- Boil the carrots in a sauce pan for 25 minutes, drain and reserve in a bowl
- Using an electric blender, blend the carrots in the bowl with some of their boiling water until even and smooth
- Stir in to combine some extra virgin olive oil, salt to taste, honey and fresh cream
- Warm it in a sauce pan before serving and top with some grated Parmesan cheese or olive oil!

Tips from the Chef
- For best results use farm fresh carrots or baby carrots, that are more tender and sweet
- Fresh carrots can be distinguished by the presence of green leaves, compared to packed carrots
- You can top your soup with sautéed bacon slices or shrimps
