Probably the most famous salad in the world, named after its inventor, the great chef Caesar Cardini. You can use coddled eggs if you have any concerns about raw eggs, and anchovies instead of the Worcestershire sauce. Ingredients (for 2)
- romaine lettuce (about 120 gr or 4 oz)
- 1/2 cup garlic croutons
- 1/4 cup Parmesan cheese
- 2 eggs
- 1 tbsp Worcestershire sauce
- 1 tbsp lemon juice
- 1 tbsp red wine vinegar
- 1 tsp white sugar
- 1 garlic clove
- 2 tbsp olive oil
- salt & black pepper
Directions
- In a large bowl add the oil, garlic clove (crushed) and egg yolks, and whisk until smooth and creamy
- Add lemon juice, Worcestershire sauce, sugar and vinegar and stir thoroughly
- In a separate bowl prepare a bed of lettuce and lay on top croutons and shaved Parmesan cheese
- Season with a pinch of salt and pepper
- Pour the vinaigrette on the salad, toss and serve straight away
