A quick recipe for cooking almond cookies for your tea / coffee time or breakfast…
Ingredients (for 2)
- 1/2 cup wheat flour
- 1/4 cup almonds
- 1/2 tsp vanilla extract
- 1/2 tsp baking powder
- 2 tbsp white sugar
- 1 egg
- 3 tbsp butter
- 1 tbsp powdered sugar
- a pinch of salt
Directions
- Preheat oven to 350 °F (180 °C)
- Take a small bowl and mix together white flour, baking powder and salt
- In a larger bowl, beat the eggs and start adding butter (previously melted) and sugar, continue beating until fluffy
- Add the flour mixture to the larger bowl and stir to combine
- Chop almonds in small pieces and add them with the vanilla extract to the mixture
- With your hand, take a small quantity of dough (about 1 tbsp) and shape cookies in your favorite shape (“S”, “O”, or small sticks)
- Take a baking pan and cover it with a baking sheet; lay your cookies on the paper, leaving enough space between each other
- Place in oven (middle rack) and bake for 15 minutes, or until brown on the edges
- With a spatula remove cookies from the baking sheet and let cool a few minutes
- With a flour sifter, sprinkle the powdered sugar over the cookies and serve!
