Butter Cookies with Almonds

A quick recipe for cooking almond cookies for your tea / coffee time or breakfast…

Ingredients (for 2)

  • 1/2 cup wheat flour
  • 1/4 cup almonds
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 2 tbsp white sugar
  • 1 egg
  • 3 tbsp butter
  • 1 tbsp powdered sugar
  • a pinch of salt


  • Preheat oven to 350 °F (180 °C)
  • Take a small bowl and mix together white flour, baking powder and salt
  • In a larger bowl, beat the eggs and start adding butter (previously melted) and sugar, continue beating until fluffy
  • Add the flour mixture to the larger bowl and stir to combine
  • Chop almonds in small pieces and add them with the vanilla extract to the mixture
  • With your hand, take a small quantity of dough (about 1 tbsp) and shape cookies in your favorite shape (“S”, “O”, or small sticks)
  • Take a baking pan and cover it with a baking sheet; lay your cookies on the paper, leaving enough space between each other
  • Place in oven (middle rack) and bake for 15 minutes, or until brown on the edges
  • With a spatula remove cookies from the baking sheet and let cool a few minutes
  • With a flour sifter, sprinkle the powdered sugar over the cookies and serve!
