Breakfast Lasagna

I bet you didn’t know you could have lasagna for breakfast? Read on fellow chefs…

Ingredients (for 2)

  • 6 sheets phyllo pastry
  • 4 eggs
  • 1 andouille sausage
  • 1/2 cup cheddar cheese
  • 2 tbsp vegetable oil
  • salt & pepper


  • Grease a baking pan and set oven to 350 °F (180 °C)
  • Beat eggs with some salt and pepper; cook scrambled in a skillet, not too dry, and put aside
  • Lay phyllo dough in prepared baking pan and top with some eggs, then add cheese
  • Add another layer of phyllo dough, then sausage, then cheese and repeat with a final layer of dough, eggs and cheese
  • Bake for 8-10 minutes or until cheese melts and dough is puffed
  • Remove from oven, slice into squares and enjoy!
