Ingredients (for 2)
- 6 sheets phyllo pastry
- 4 eggs
- 1 andouille sausage
- 1/2 cup cheddar cheese
- 2 tbsp vegetable oil
- salt & pepper
Directions
- Grease a baking pan and set oven to 350 °F (180 °C)
- Beat eggs with some salt and pepper; cook scrambled in a skillet, not too dry, and put aside
- Lay phyllo dough in prepared baking pan and top with some eggs, then add cheese
- Add another layer of phyllo dough, then sausage, then cheese and repeat with a final layer of dough, eggs and cheese
- Bake for 8-10 minutes or until cheese melts and dough is puffed
- Remove from oven, slice into squares and enjoy!
