Very easy Chinese soup recipe, just a few leaves of bok choi and the magic of chicken stock. If you do not have ready chicken stock or bouillon cubes, go check out our Ingredients section to make your own! Easily turns into a vegetarian recipe by substituting chicken with vegetable stock
Ingredients (for 2)
- 1 cup bok choi (Chinese cabbage)
- 3 cups chicken stock
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/4 onion
- 2 tbsp olive oil
- chili pepper
Directions
- Slice the bok choi and the onions, and set aside
- Heat the oil in a saucepan and stir fry the bok choi, together with the onions for 5-6 minutes
- Stir in the soy sauce while cooking at medium heat
- In a separate saucepan, bring the chicken stock to a boil
- Add the bok choi and the onions, and simmer for a couple of minutes
- Add just a few drops of sesame oil and sprinkle with fresh chili pepper
