Bhindi (or okra) is a very popular vegetable in India and lends itself to many different delicious preparations. If you are looking for a hearty vegetarian curry recipe, look no further!
Ingredients (for 2)
- 2 cups okra
- 1 cup peeled tomatoes (chopped)
- 1 tsp curry powder
- 1/4 onion
- 1 garlic clove
- 1 tsp cumin seeds
- 1/2 tsp garam masala powder
- 2 tbsp vegetable oil
- 1 tsp ginger
Directions
- Chop the okra, tomatoes and onions and set them aside
- Heat the oil in a wok or large skillet, add the cumin seeds and let them sizzle for a couple of minutes
- Add the onions and stir fry until golden brown
- Add the tomatoes, garlic cloves (crushed), ginger (grated), garam masala and curry powder
- Simmer at low heat for 10 minutes
- Add the okra, give it a good stir and cook until tender
