Beef Steak with Pico de Gallo

Pico de Gallo is a fresh uncooked sauce or side, excellent for a big, thick grilled steak. It’s made with chopped tomatoes, white onion and green chilies…

Ingredients (for 2)

  • 2 beef round steaks (about 14 oz or 400 gr)
  • 1 jalapeno pepper
  • 2 poblano peppers
  • 1 red tomato
  • 2 tbsp cilantro
  • 1 lime
  • 1/2 onion
  • 1 tbsp vegetable oil
  • salt and black pepper

Directions

  • Deseed and finely dice the tomato (plum tomatoes are ideal)
  • Peel and dice the onion
  • Remove stems and seeds from chilies and slice thinly
  • Add onions, tomatoes and chilies to a ramekin or small bowl
  • Add chopped fresh coriander, squeezed lime juice and a pinch of salt, and toss well to combine
  • Refrigerate for at least 30 minutes to blend all flavors
  • In the meantime, brush a grill pan with some vegetable oil, sprinkle with some salt and place over high heat
  • When the grill is hot, add the beef steak and cook over high heat for 2-3 minutes
  • When the beef is well browned, turn over
  • Sprinkle some more salt (and black pepper if you like) and brown the other side for 2-3 minutes
  • Reduce heat to medium, turn over again and finish cooking as desired
  • Let it rest on a platter for 2-3 minutes, slice it thinly and serve with some pico de gallo on top
