Pico de Gallo is a fresh uncooked sauce or side, excellent for a big, thick grilled steak. It’s made with chopped tomatoes, white onion and green chilies…
Ingredients (for 2)
- 2 beef round steaks (about 14 oz or 400 gr)
- 1 jalapeno pepper
- 2 poblano peppers
- 1 red tomato
- 2 tbsp cilantro
- 1 lime
- 1/2 onion
- 1 tbsp vegetable oil
- salt and black pepper
Directions
- Deseed and finely dice the tomato (plum tomatoes are ideal)
- Peel and dice the onion
- Remove stems and seeds from chilies and slice thinly
- Add onions, tomatoes and chilies to a ramekin or small bowl
- Add chopped fresh coriander, squeezed lime juice and a pinch of salt, and toss well to combine
- Refrigerate for at least 30 minutes to blend all flavors
- In the meantime, brush a grill pan with some vegetable oil, sprinkle with some salt and place over high heat
- When the grill is hot, add the beef steak and cook over high heat for 2-3 minutes
- When the beef is well browned, turn over
- Sprinkle some more salt (and black pepper if you like) and brown the other side for 2-3 minutes
- Reduce heat to medium, turn over again and finish cooking as desired
- Let it rest on a platter for 2-3 minutes, slice it thinly and serve with some pico de gallo on top
