Carpaccio is a very versatile ingredient, try it with orange and pine nuts… not your usual recipe!
Ingredients (for 2)
- beef carpaccio (about 250 gr. or 9 oz.)
- 1 cup arugula
- 1/4 cup orange juice
- 1 tbsp pine nuts
- 2 tbsp olive oil
- salt & black pepper
Directions
- In a small bowl mix the orange juice, the olive oil, salt, black pepper and stir to combine
- Arrange the beef carpaccio slices on a serving plate and pour over the orange emulsion
- Wash the arugula and add it on top of the meat
- Add the pine nuts
- Drizzle with some more olive oil and serve cool

- You can greatly enhance the flavor of pine nuts by roasting them in a non-stick pan for a couple of minutes
