Beef Carpaccio in Orange Marinade

Carpaccio is a very versatile ingredient, try it with orange and pine nuts… not your usual recipe!

Ingredients (for 2)

  • beef carpaccio (about 250 gr. or 9 oz.)
  • 1 cup arugula
  • 1/4 cup orange juice
  • 1 tbsp pine nuts
  • 2 tbsp olive oil
  • salt & black pepper

Directions

  • In a small bowl mix the orange juice, the olive oil, salt, black pepper and stir to combine
  • Arrange the beef carpaccio slices on a serving plate and pour over the orange emulsion
  • Wash the arugula and add it on top of the meat
  • Add the pine nuts
  • Drizzle with some more olive oil and serve cool

  • You can greatly enhance the flavor of pine nuts by roasting them in a non-stick pan for a couple of minutes
