Fresh carpaccio with shaved Parmesan cheese on top. Simple, healthy, classy and no cooking needed.
Ingredients (for 2)
- 12 slices beef carpaccio (about 9 oz. or 250 gr.)
- 1 cup arugula
- 1/2 cup shaved Parmesan cheese
- 2 tbsp olive oil
- 2 tbsp lemon juice
- salt & black pepper
Directions
- In a small bowl mix the lemon juice, the olive oil, salt, black pepper and stir to combine
- Arrange the beef carpaccio slices on a serving plate and pour over the lemon emulsion
- Wash the arugula and add it on top of the meat
- Shave the Parmesan cheese on top, drizzle with some more olive oil and serve cool

Tips from the Chef
- If the lemon flavor is too strong for your taste, you can substitute it with fresh orange juice
- Try adding some pine nuts as final touch!
