One pot meal can sometimes be the best for those who don’t like to make a fuss when in the kitchen. This shrimp and corn mixture can be made on the grill or in an oven and is great for camping trips…
Ingredients (for 2)
- 1 ½ cup shrimp or prawn
- 2 cups baby corn
- 1/2 tbsp lemon juice
- 1/2 tbsp brown sugar
- 1/2 tbsp soy sauce
- 1/2 tsp coriander seeds
- 1 tsp ginger
- 1 tbsp honey
- 1/4 cup orange juice
- 1 garlic clove
- black pepper
Directions
- Peel and devein the shrimp, then rinse under cold water
- Put all ingredients into a Ziploc bag and combine by shaking
- Place bag into refrigerator for 30 minutes to marinate
- When ready, put the mixture into aluminum foil or a foil oven bag and bake for 10 minutes or put on a grill for 15 minutes
- Serve hot and enjoy!
