Barbecued Lemon Shrimp and Corn

One pot meal can sometimes be the best for those who don’t like to make a fuss when in the kitchen. This shrimp and corn mixture can be made on the grill or in an oven and is great for camping trips…

Ingredients (for 2)

  • 1 ½ cup shrimp or prawn
  • 2 cups baby corn
  • 1/2 tbsp lemon juice
  • 1/2 tbsp brown sugar
  • 1/2 tbsp soy sauce
  • 1/2 tsp coriander seeds
  • 1 tsp ginger
  • 1 tbsp honey
  • 1/4 cup orange juice
  • 1 garlic clove
  • black pepper


  • Peel and devein the shrimp, then rinse under cold water
  • Put all ingredients into a Ziploc bag and combine by shaking
  • Place bag into refrigerator for 30 minutes to marinate
  • When ready, put the mixture into aluminum foil or a foil oven bag and bake for 10 minutes or put on a grill for 15 minutes
  • Serve hot and enjoy!
