Banana Pancakes

A variation of the original pancakes, with the addition of bananas into the mix… yummy!

Ingredients (for 2)

  • 1 cup white flour
  • 1 cup milk
  • 1 banana (overripe)
  • 1 egg
  • 1 tsp baking powder
  • 2 tbsp white sugar
  • 2 tbsp butter
  • salt

Directions

  • Take a small sauce pan and melt butter over low heat
  • In a different bowl mix together flour, salt, baking powder and sugar
  • Make a well in the flour mixture and add beaten eggs in the middle
  • Mash the bananas and add them too
  • Pour melted butter and milk, and stir well to combine
  • Heat a small nonstick pan over medium heat
  • When hot, pour part of the pancake mixture into the pan and spread evenly
  • When the upper side of the pancake is bubbling, turn over with a spatula and cook for 1 minute more
  • Serve hot and pour maple syrup on top!

Tips from the Chef

  • If you want it even faster and easier, just put all ingredients into a blender and mix together
  • Pour enough mixture into the pan to have a nice thickness
