Baked Halibut with Mango Ginger Salsa

Ingredients (for 2)

  • 1 fillet halibut
  • 1/2 bell pepper
  • 1/4 mango
  • 1 red tomato
  • 1 lime
  • 1/4 onion
  • 1 garlic clove
  • 1 tbsp mayonnaise
  • 1/2 tsp cumin seeds
  • 2 tbsp cilantro
  • 1 tsp ginger
  • a touch of black pepper
  • 2 tbsp olive oil


  • Chop mango, tomatoes, onions and bell peppers, and put in a bowl with lime juice, ginger (grated) and cilantro
  • Mix all ingredients together and put aside in refrigerator until needed
  • Use a processor to blend: mayo, cilantro, cumin, lime juice and cayenne pepper together
  • Put sauce aside till needed
  • Season the halibut with pepper and salt
  • Heat oil in a large pan and place fish in pan; cook for 4 minutes on both sides
  • Serve with salsa and drizzle with cilantro sauce
