Cheer up your mashed potatoes with a touch of bacon!
Ingredients (for 2)
- 4 potatoes
- 1/4 cup bacon cubes
- 1/2 cup milk
- 2 tbsp butter
- 2 tbsp olive oil
- 1/2 tsp nutmeg
- rock salt
- black pepper
Directions
- Boil the potatoes in salted water until soft (cooking time depends on potato size, but you can expect about 30 minutes for medium sized potatoes)
- In the meantime, melt the butter in a saucepan, add the milk and just a touch of nutmeg
- Stir thoroughly and cook at low heat for a couple of minutes
- In a separate saucepan, stir fry the bacon cubes in olive oil at medium heat until brown and set aside
- Drain and peel the potatoes
- Mash them in a large bowl using a fork and add the bacon
- Stir in the milk and butter a little at a time, to get the desired consistency
- If you like, add a pinch of pepper (no salt, the bacon already has plenty)
