Bacon Mashed Potatoes

Cheer up your mashed potatoes with a touch of bacon!

Ingredients (for 2)

  • 4 potatoes
  • 1/4 cup bacon cubes
  • 1/2 cup milk
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1/2 tsp nutmeg
  • rock salt
  • black pepper

Directions

  • Boil the potatoes in salted water until soft (cooking time depends on potato size, but you can expect about 30 minutes for medium sized potatoes)
  • In the meantime, melt the butter in a saucepan, add the milk and just a touch of nutmeg
  • Stir thoroughly and cook at low heat for a couple of minutes
  • In a separate saucepan, stir fry the bacon cubes in olive oil at medium heat until brown and set aside
  • Drain and peel the potatoes
  • Mash them in a large bowl using a fork and add the bacon
  • Stir in the milk and butter a little at a time, to get the desired consistency
  • If you like, add a pinch of pepper (no salt, the bacon already has plenty)
