Baby Spinach and Gorgonzola Salad

The freshness and sweetness of baby spinach and apples are combined with the strong taste of Gorgonzola cheese. Topped with a special and delicious dressing made with mustard and honey. Really good!

Ingredients (for 2)

  • 4 cups baby spinach
  • 1/2 cup gorgonzola cheese
  • 1/2 apple
  • 1/2 tbsp mustard
  • 1 tbsp honey
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1/2 shallot
  • salt & black pepper

Directions

  • Wash thoroughly and dry the baby spinach, cut it and place it in a salad bowl
  • Take a small bowl and prepare the dressing by mixing together: Dijon mustard, black pepper, salt, honey, olive oil, water and white vinegar; whisk vigorously until emulsified (5-7 minutes)
  • Finely mince the shallots and add them to the dressing bowl
  • Peel and deseed apples and slice them into the salad bowl with the spinach
  • Crumble Gorgonzola cheese (or Roquefort, or any blue cheese) into the salad bowl
  • Pour over the vinaigrette, toss well and serve!
