The freshness and sweetness of baby spinach and apples are combined with the strong taste of Gorgonzola cheese. Topped with a special and delicious dressing made with mustard and honey. Really good!
Ingredients (for 2)
- 4 cups baby spinach
- 1/2 cup gorgonzola cheese
- 1/2 apple
- 1/2 tbsp mustard
- 1 tbsp honey
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- 1/2 shallot
- salt & black pepper
Directions
- Wash thoroughly and dry the baby spinach, cut it and place it in a salad bowl
- Take a small bowl and prepare the dressing by mixing together: Dijon mustard, black pepper, salt, honey, olive oil, water and white vinegar; whisk vigorously until emulsified (5-7 minutes)
- Finely mince the shallots and add them to the dressing bowl
- Peel and deseed apples and slice them into the salad bowl with the spinach
- Crumble Gorgonzola cheese (or Roquefort, or any blue cheese) into the salad bowl
- Pour over the vinaigrette, toss well and serve!
