Ingredients (for 2)
- 4 baby potatoes
- 2 tbsp butter
- 2 tbsp parsley
- a pinch of salt
Directions
- Peel and rinse the potatoes and add them to a microwave-safe bowl
- Add a couple of tablespoons of water per serving and stir
- Cover with a plastic lid
- Cook in microwave at high heat for 5-6 minutes
- Let rest (covered) for 5 minutes
- Add butter, freshly chopped parsley and salt, and toss to combine
