Baby Potatoes with Parsley

Easy (and very quick!) way to cook potatoes with microwave. Just follow the instructions and use small baby potatoes…

Ingredients (for 2)

  • 4 baby potatoes
  • 2 tbsp butter
  • 2 tbsp parsley
  • a pinch of salt


  • Peel and rinse the potatoes and add them to a microwave-safe bowl
  • Add a couple of tablespoons of water per serving and stir
  • Cover with a plastic lid
  • Cook in microwave at high heat for 5-6 minutes
  • Let rest (covered) for 5 minutes
  • Add butter, freshly chopped parsley and salt, and toss to combine

Any meat or fish course

  • If you use larger potatoes instead of baby ones, cut them in bite sized pieces
