Delicious and super easy avocado salad with fresh mint and vinaigrette… a little French wonder for you!
Ingredients (for 2)
- 2 avocados
- 1/4 head romaine lettuce (about 120 gr o 4 oz)
- 1 tbsp fresh mint
- 1/2 shallot
- 1 tbsp Dijon mustard
- 4 tbsp olive oil
- 1 tbsp red wine vinegar
- salt & black pepper
Directions
- Prepare the vinaigrette by combining in a small bowl: red wine vinegar (or fresh lemon juice), minced shallots, Dijon mustard, salt and black pepper
- Start to add extra virgin olive oil (or other vegetable oil) in a steady slow stream, whisking constantly (when the mixture starts to thicken, add more oil until all oil is used)
- Wash and cut lettuce discarding any broken leaves
- Slice it to your favorite size and add it to a salad bowl
- Peel and slice ripe avocados and lay slices on top of lettuce
- Pour the vinaigrette over and sprinkle with finely chopped fresh mint

In general, to make a thick, well-emulsified vinaigrette, combine the acidic part (lemon juice or vinegar) in a bowl with all seasonings (salt, mustard, herbs, shallots…), then slowly add the oil, drop by drop, whisking constantly
