Avocado Salad in French Vinaigrette

Delicious and super easy avocado salad with fresh mint and vinaigrette… a little French wonder for you!

Ingredients (for 2)

  • 2 avocados
  • 1/4 head romaine lettuce (about 120 gr o 4 oz)
  • 1 tbsp fresh mint
  • 1/2 shallot
  • 1 tbsp Dijon mustard
  • 4 tbsp olive oil
  • 1 tbsp red wine vinegar
  • salt & black pepper


  • Prepare the vinaigrette by combining in a small bowl: red wine vinegar (or fresh lemon juice), minced shallots, Dijon mustard, salt and black pepper
  • Start to add extra virgin olive oil (or other vegetable oil) in a steady slow stream, whisking constantly (when the mixture starts to thicken, add more oil until all oil is used)
  • Wash and cut lettuce discarding any broken leaves
  • Slice it to your favorite size and add it to a salad bowl
  • Peel and slice ripe avocados and lay slices on top of lettuce
  • Pour the vinaigrette over and sprinkle with finely chopped fresh mint

Tips from the Chef

In general, to make a thick, well-emulsified vinaigrette, combine the acidic part (lemon juice or vinegar) in a bowl with all seasonings (salt, mustard, herbs, shallots…), then slowly add the oil, drop by drop, whisking constantly
