Arugula Shrimp and Watermelon Salad

Shrimp and watermelon may seem an odd pair but the two blend perfectly together to give a salty, sweet taste in this salad that is very refreshing. The dish overall has an amazing blend of sweet, salty, peppery and creamy flavors that will surprise your taste buds…

Ingredients (for 2)

  • 1 cup shrimps / prawns
  • 4 cups arugula (about 3-4 oz.)
  • 1 wedge watermelon
  • 1/2 cup feta cheese
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/4 onion
  • 1 garlic clove
  • salt & pepper as desired


  • Heat oil in a skillet, add garlic and sauté for 1 minute, then put in shrimp
  • Cook shrimp for 3-4 minutes, then cover pan and remove from flame (allow steam to finish cooking shrimp)
  • Put watermelon (chopped), cheese, arugula and onion (sliced) in a bowl and drizzle with lemon juice and olive oil
  • Add pepper and salt to taste
  • Add shrimp to mixture, toss and enjoy!
