A delicious and easy preparation for lamb, marinated in soy sauce and spices. Ideally would need to be refrigerated overnight, but you can speed up preparation to 1 and ½ hours…
Ingredients (for 2)
- 6 small lamb chops (about 280 gr. or 10 oz.)
- 2 limes
- 2 tbsp soy sauce
- 1 tbsp white sugar
- 2 tbsp coriander / cilantro
- 1/4 chili pepper
- 1 garlic clove
- 4 tbsp olive oil
- a pinch of salt & black pepper
Directions
- Cut limes into wedges and save some for decoration
- In a bowl mix together: soy sauce, olive oil, sugar, some lime juice, minced garlic, chili powder, salt and black pepper
- Brush the mixture on lamb chops and let the meat marinate in the bowl with spices, covered, for at least 1 hour (ideally overnight) in the fridge
- Remove lamb from the fridge and preheat oven to 400 °F (200 °C)
- Place the lamb chops into a roasting pan, pouring over the remaining marinade sauce
- Place in oven and broil for 20-25 minutes
- When ready, put on a serving plate and sprinkle some freshly chopped coriander on top
- Garnish with remaining lime wedges and serve!
